Ingredients for Eggplant with Beef
- 1 kg diced beef
- 10-15 tablespoons olive oil
- Half cup of hot water (for the beef)
- 2 onions
- 4-5 eggplants
- 2-3 potatoes
- 5-6 italian green peppers
- 2 red paprika peppers
- 3-4 tomatoes
- 2 cloves garlic
- 1 tablespoon tomato/pepper paste
- Salt
- Black pepper
- Pul biber/cayenne/red paprika pepper
- 10-15 sprigs parsley
- Hot water
Cooking Instructions for making Eggplant with Beef
Cook the cubed beef over high heat until it releases its juices. When you release the water, add half a cup of hot water and close the lid, cook on low heat until all the water is absorbed.
Peel the eggplants in striped pajamas and and cut them into large cubes, and fry them in a pan, airfryer or oven.
Peel the potatoes and cut them into large cubes and fry them in a pan, airfryer or oven.
Cut the peppers into large cubes and fry them in a pan, airfyer or oven.
When the beef is cooked, add the olive oil and cook for a few minutes, stirring.
Cut the onions into small cubes and add to the pot and cook.
Add the tomatoes cut into small cubes, tomato paste and the garlic cut into small cubes and mix, cook for a few minutes.
Add the fried vegetables and mix.
Add hot water in the pot at the same height as the food, and add salt, spices and finely chopped parsley mix.
Close the lid and cook on low heat for 10 minutes.
