Ingredients for Filipino Adobo
- Chicken or pork (or a mix of both) – about 1 kg, cut into serving pieces
- 1/2 cup Soy sauce –
- 1/4 cup Vinegar –
- Garlic – 4-6 cloves, minced
- Onion – 1 medium, sliced (optional)
- Bay leaves – 2-3 pieces
- Black peppercorns – 1 teaspoon (or ground black pepper to taste)
- Salt – to taste
- Water – 1-2 cups (depending on how much sauce you prefer)
- Oil – for sautéing (optional)
Cooking Instructions for making Filipino Adobo
Marinate the Meat: In a bowl, combine the chicken or pork, soy sauce, vinegar, minced garlic, bay leaves, black peppercorns, and salt. Mix everything together and ensure the meat is well-coated in the marinade. Let it sit for at least 30 minutes to 1 hour, or preferably overnight in the fridge for deeper flavor.
Cook the Adobo: In a large pot or deep pan, add the marinated meat along with the marinade. Pour in 1-2 cups of water, depending on how much sauce you like. Stir the ingredients and bring the mixture to a boil.
Simmer: Once boiling, lower the heat and let it simmer for 30-40 minutes, or until the meat is tender and the sauce has thickened to your liking. Stir occasionally to ensure the flavors blend well.
Optional Sauté (for extra flavor): If you prefer, heat a little oil in a separate pan and sauté onions (if using) until softened. You can then add this to the pot in the last 10 minutes of cooking for extra flavor.
Final Seasoning: Taste the sauce and adjust the seasoning if needed, adding more salt or pepper as necessary.
Serve: Once the meat is tender and the sauce has thickened, remove from heat. Serve your Filipino Adobo with steamed rice, and enjoy!
