Ingredients for Foccacia
- 500 gr strong flour (typ 550/ typo 00)
- 400-410 ml water
- 10 ml olive oil
- 10 gr fresh yeast/ 2 gr instant yeast
- 10 gr salt
- 1 tsp honey
- Topping
- 1 tsp Rosemary
- 1 tsp thyme
- 1 tsp sea salt
Cooking Instructions for making Foccacia
Mix the water, honey, salt, and olive oil in a bowl. Add the yeast into it and let it dissolve.
Add the flour on top. Mix it well with a spatula if you don’t want your hand sticky.
Cover the bowl with cling wrap and keep it on the kitchen table.
After 30 mins – 1 hour, wet your hand and do coil fold on the dough
After 30 mins, do the second coil fold. And place the dough in the fridge overnight maximun 20 hours
The next morning, remove it from the fridge. Prepare a baking form or tray with a high edge, oil the form with olive oil. Gently use your hand to remove the dough from the bowl to the tray/ form
Place it in a warm place for 2 hours. 30 minutes before baking, pre heat the oven on 220°C
After 2 hours, the dough will be relaxing. It is time to dimple the dough and garnish the dough.
Gently dimple it with your finger, sprinkle any toppings that you like: rosemary, thyme, tomatoes, salt, sauce, garlic, shallot, etc.
Bake the foccacia for 15- 20 mins until golden brown. I place it at the bottom part of the oven.
After baking time, remove it out of form and cool it down.
