Ingredients for French beans & potato wraps
- 8 flour tortillas
- 2-3 medium potatoes 🥔
- 2 tbsp butter
- 1 tbsp oil
- 1 tsp onion seeds 🧅
- 2-3 dried red chillies
- 8 garlic cloves chopped 🧄
- 2 tbsp chopped coriander leaves 🌿
- 2 tbsp mint leaves 🌱
- 1 tsp sugar
- 1 tsp lemon juice 🍋
- 1 onion cut into rings
- 4 tbsp yogurt mint chutney
- 4 tbsp tamarind chutney
Cooking Instructions for making French beans & potato wraps
Mix coriander leaves 🌿, mint leaves 🌱, sugar, salt and lemon juice 🍋 together and keep aside.
Heat butter and oil in a wok, reduce heat and add onion seeds, red chillies broken pieces 🌶️ and garlic 🧄. Stir for 1/2 a min on low flame add potatoes 🥔 and stir for 2-3 mins, cover and cook for about 7 mins till crisp and tender, add french beans, 1/4 tsp salt, stir fry for 5 mins on medium heat, cover and cook for another 5 mins till soft but crunchy.
Remove from heat, add coriander – mint mixture and mix well, on each flour tortillas spread some yogurt mint chutney and then add tamarind chutney, arrange some beans mixture in the center, sprinkle some onion rings, roll up the tortilla to make a roll, secure with toothpick.
Pan fry the rolls with 2 tsp oil till brown patches appear on them on both sides, serve hot with tomato ketchup 🍅.
