Ingredients for Fried Vegetable Rice
- 1 cup Rice
- Onions
- Green pepper
- Egg plant (optional)
- Carrots
- Pre boiled Green peas
- 2 tea spoons of Salt
- 1/2 tea spoon spice for rice (optional)
- 2 cups water
Cooking Instructions for making Fried Vegetable Rice
Wash the rice till all the water is clear, and soak it for 30 minutes to 1 hour
Cut all the necessary ingredients and start by frying the pre cut onions
Add the pre cut green pepper and saute; this will give the rice an intense flavour, please note that the ingredients should be light fried to ensure they remain crunchy
Add the pre cut egg plant and carrots and saute; then add the pre boiled green peas and stir; add salt to taste and spice for rice; cover your cooking pan and let them cook for five minutes
Drain the rice; you will notice the rice has puffed up, hence why we only add two cups of water to the washed two cups of rice. Add the rice to the cooking pot and stir lightly. Add two cups of water
Allow the rice to come to a boil then stir; reduce the heat to a complete minimum; to cover and let it steam.
Serve with any stew of choice.
The key to having the perfect rice, (not sticky or mashed) is pre soaking it for a minimum of thirty minutes, using the right portion of water, and using extremely low heat during the last stage of cooking.
