Ingredients for Garlic Butter Chicken with Lemon Herb Sauce
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 5 garlic cloves, minced
- 1 cup chicken broth
- 1 lemon (juice and zest)
- 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon chopped fresh parsley (for garnish)
- Salt and black pepper (to taste)
Cooking Instructions for making Garlic Butter Chicken with Lemon Herb Sauce
Prepare the Chicken:
Pat the chicken thighs dry with a paper towel. Season generously with salt and black pepper on both sides.
Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat.
Place the chicken thighs skin-side down and sear for 5–7 minutes until golden and crispy. Flip and cook for another 5 minutes. Remove chicken and set aside.
Make the Sauce:
Lower the heat to medium. Add butter to the same skillet and melt. Stir in the minced garlic and cook for 1 minute until fragrant.
Add chicken broth, lemon juice, and zest. Stir to combine. Let it simmer for 2–3 minutes.
Cook the Chicken in the Sauce:
Return the chicken to the skillet. Sprinkle thyme over the chicken and sauce.
Cover and simmer for 15–20 minutes, or until the chicken is fully cooked (internal temp: 165°F/75°C).
Finish and Serve:
Spoon the sauce over the chicken, and garnish with chopped parsley.
Serve hot with your choice of sides.
