Cooking Instructions for making Goats Cheese Tart with caramelised onions, walnuts, black pepper and fresh basil
Make the onions in advance. 3 red onions chopped finely and cooked in 2 tbsp olive oil (salt added) on low heat for 30-40 minutes. Add 2 tbsp soft brown sugar and 2 tbsp balsamic vinegar. Continue to cook on low heat for 5-10 until sugar dissolves and vinegar reduces.
Preheat oven to 200°C/180°C Fan assisted. Work with puff pastry as per pack instruction and then cut into 6 and position on a baking tray lined with parchment paper.
In a bowl, mix goats cheese, black pepper, caramelised onions, chopped walnuts and chopped basil. Ensure all mixed well together then scoop 1/6 mixture into centre of each square.
Bring each corner towards the centre so they are overlapping each other in corners but leave space in centre. Press the last one down a little but not too much as you want them to open during baking.
Brush with egg wash and bake for about 20 minutes or until golden brown. Best served warm. Can be eaten cold or warmed again at 190°C/170°C Fan assisted for about 10 minutes.
