Ingredients for Golden lemon almond cookies
- 1 cup all purpose flour
- 1/4 cup corn flour
- 1/2 cup softened unsalted butter
- 1/2 cup powdered sugar
- 1 egg
- 1 egg white
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/2 tsp baking powder
- 15-20 sliced half almonds for topping
- For lemon honey glaze 🍯:
- 1 tbsp honey
- 2 tbsp powdered sugar
- 1 tsp lemon juice or to taste
- 1 tsp warm water for thin layer
- 1/2 tsp lemon zest
Cooking Instructions for making Golden lemon almond cookies
Preheat oven at 180°c line a baking sheet with parchment paper and keep aside. Mix together all purpose flour, corn flour, salt and baking powder and keep aside. Cream together butter & powdered sugar until light and fluffy, add egg yolk, almond extract, vanilla extract, lemon zest and mix well, add egg white and mix well, gradually add to the wet ingredients (all purpose flour mixture) and mix well until dough forms.
Shape into small balls and flatten slightly and decorate the cookies if desired, then press half sliced almonds on each cookies, bake for 12-15 mins or until edges are lightly golden, remove and rest for 2 mins and transfer the cookies to wire rack and let them cool.
For lemon honey glaze: prepare glaze by mixing honey, powdered sugar, lemon juice, mix well, add warm water mix, finally add lemon zest and mix well, brush the warm cookies with the lemon honey glaze to give them a natural golden shine and let cool completely before serving.
