Ingredients for Hedgehog bread
- 450 g strong white bread flour
- 1 1/2 teaspoons salt
- 2 teaspoons caster sugar
- 1 1/2 teaspoons easy blend dried yeast
- 275 ml milk
- 25 g butter
- 1 egg (optional)
Cooking Instructions for making Hedgehog bread
Shake the flour and salt through a sieve into a large bowl. Stir in the sugar and yeast, then make a hollow in the middle
Put the milk and butter into a pan and heat it very gently until the butter has just melted. Take the pan off the heat
Pour the milk mixture into the hollow in the flour. Stir it until it is all mixed and no longer sticks to the side of the bowl.
Sprinkle flour onto a clean, dry surface. Knead the dough by pushing it away, folding in half, turn and repeat
Knead the dough until it is smooth and stretchy grease the bowl then place the dough in the bowl
Cover and leave in a warm place for 45 minutes
Knead the dough to burst and large air bubbles then divide into the desired size
Now you can shape the dough into whatever shape you want. to make a hedgehog, use scissors to snip spikes into the desired location and pinch a small nose out of the dough
Finally turn on your oven. Place the dough on a baking tray, cover and leave in a warm place for 20 minutes
This step is optional but if you want, cover the rolls in beaten egg
Bake the rolls for 10-12 minutes. Leave on the tray for a few minutes, then transfer to a cooling rack (or into your mouth, but each to their own)
