Ingredients for Hummus Bil Lahme (Lebanese Hummus & Spiced Beef with Whipped Feta)
- Homemade Hummus
- 1 can chickpeas (400g)
- 3 Tablespoons Squeezed Lemon
- 2 Tablespoons Hulled Tahini
- 1-2 Teaspoons Salt
- 1-2 Garlic Cloves
- 1-2 tablespoons olive oil
- 1/4 cup reserved chickpea water (or water)
- 3-4 ice cubes
- Whipped Feta Sauce
- 1 block feta
- 1/2 cup Greek yoghurt
- 2 Tablespoons fresh parsley
- 2 tablespoons lemon juice
- 1/4 teaspoon minced garlic
- Spiced beef
- 500 g beef or lamb mince
- 3-4 Tablespoons Lebanese 7 spice (1 tablespoon allspice, ground coriander, cinnamon, 1.5 teaspoon black pepper, ground cloves, cumin and ground nutmeg)
- 1/2 brown onion (chopped finely)
- Garnish
- 3-4 tablespoons toasted pine nuts (in oil)
- 1-2 tablespoons chopped parsley
- 3-4 left over chickpeas
- 1 x salt and pepper to taste
Cooking Instructions for making Hummus Bil Lahme (Lebanese Hummus & Spiced Beef with Whipped Feta)
Start by toasting your pine nuts on a medium low heat until just browned slightly.
Start by adding all hummus ingredients into a high powered blender or food processor with ice cubes. Begin to blend, slowly stream in small amount of olive oil as you go. Check after 2-3 mins for consistency and perhaps blend for another minute for a creamy texture.
Clean food processor and put all ingredients in for the whipped feta sauce. Blend only until it’s smooth and remove into a bowl into the fridge.
In a medium high heat, cook the onion until translucent, then brown the beef and add the spice mix. Continue to cook for 5-7 mins and turn off the heat.
Plate your hummus, then beef and garnish with pine nuts, whipped feta, chickpeas, parsley and salt and pepper. Eat with pita chips or bread. Enjoy.
