Cooking Instructions for making Indonesian-style Sweet Iced Coffee (manual brew) with Coconut Sugar
This is my coffee beans. The variant is called Sumatera Madheling, from Sumatera island in Indonesia.
Look it up, the Sumatran coffee farmers have unique way to process the coffee which gives a very dark and bold flavor differing it from other origins.
Pour in 200ml of the brewed coffee, add the coconut sugar, and give it a gentle stir

Any brewing method would do, but I use Chemex technique as it is what’s available at home.
With the method and the coffee beans, I found the best coffee:water ratio to be 1:20 (hence I use 20g and 400ml of water). This ratio may be different for different beans, different brewing method, and different personal taste.
If the coffee is still hot, wait for 1-2 minutes until it gets closer to room temperature before adding the ice. Otherwise, the ice will melt too quickly and dilute the coffee too much.
Pour the milk, watch the beauty of the milk mixing with coffee. It’s kinda relaxing.
