Cooking Instructions for making JI AGWORUAGWO (Vegetable Yam)
Cut your yam into big chunks, wash and pour inside your Cooking pot. Don’t peel the back of the yam please.
Pour enough water to cover the level of the yam. Add salt and cook till the yam is tender.
While your yam is on fire, wash the Veggies very well with salt or venigar. Rinse very well with clean water. Pour into a drainer to drain out excess water from the veggies. Slice the vegetables and pour inside another Cooking pot. Add salt, the ukpaka, onion, Pepper, Red oil and 2 Cooking spoons of water. Keep aside
Peel of the back of the yam when it’s already tender. Cut into small small chunks. Pour it back into the pot and keep aside.
Place the veggies on a medium heat. Cook like for 3 to 4 minutes. Don’t overcook the veggies. Turn and mix everything together. Bring it down from fire. Pour it on top of the chunks of yam. Mix everything together and serve. You can also place it back on fire and simmer for 2 minutes if you want it very hot 😋😋😋😋
