Ingredients for Lucky jade rolls { Chinese cabbage stir fry rolls}
- 3 cups cabbage juliennes
- 1/4 cup red cabbage juliennes
- 2 carrots cut into thin ribbons
- 2 chopped green bell peppers
- 2 finely chopped green chillies
- 3-4 tbsp chopped spring onions
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1 tsp black pepper powder
- 2 cups boiled spaghetti
- 10-15 Spring rolls sheets
- Salt to taste
- 3 tbsp oil + oil for deep frying
- For stir fry sauce:
- 1/2 tbsp soy sauce
- 1/2 tbsp hoisin sauce
- 1/2 tsp rice vinegar
- 1 tsp roasted sesame seeds
- Sweet & spicy soy dipping sauce:
- 2 tbsp soy sauce
- 1 tbsp chilli sauce (any hot sauce)
- 1 tbsp honey / sugar
- 1/2 tbsp rice vinegar
- 1/2 tsp minced garlic
- 1/2 tsp grated ginger
- 1 tbsp olive oil
- 1 pinch toasted sesame seeds
Cooking Instructions for making Lucky jade rolls { Chinese cabbage stir fry rolls}
Prepare the filling: heat oil in a pan or wok over medium high heat, minced garlic and grated ginger stir fry for a few seconds until fragrant. Add juliennes cabbages, carrots and green bell peppers stir fry for 2-3 mins, pour soy sauce, hoisin sauce, black pepper and salt mix well, stir in spring onions and spaghetti cook for another min remove. Add rice vinegar at the end of stir frying the filling,remove from heat and let the filling cool completely.
Wrap the rolls place a spring roll sheet on a flat surface add filling, near one edge fold the sides in roll tightly and seal with flour – water paste. For frying: heat oil in a deep pan over medium heat, fry the spring rolls in batches turning occasionally until golden brown and crispy about 3-4 mins, remove and drain on paper napkin.
For sweet spicy soy dipping sauce: mix all ingredients in a small bowl, stir well until sugar dissolves, let it sit for 5 mins for the flavors to blend. Serve with lucky jade rolls or a dipping sauce of your choice.
