Ingredients for Mixed vegetables sabzi- 2

1/4 cup sunflower oil
/ ghee

1 bay leaf
- 1 tsp cumin seeds

2 tsp dry fenugreek leaves
- 2-3 green chillies paste
-
2 finely chopped onions
-
1 tbsp ginger garlic paste
- 1/4 tsp turmeric powder
- 1 tsp kashmiri red chillies powder
- 1/2 tsp black pepper powder
- 1 tsp coriander & cumin powder

Salt to taste
- 1/2 cup plain yogurt
- 21/2 tbsp cream

2 tbsp finely chopped coriander leaves

1/2 cup water
-
2 finely chopped tomatoes
- 1/2 tsp cinnamon powder
- 5 cloves
- 2 cardamom powder
- 12 almonds blanched

3 potatoes cut into two halves
-
1 carrot cut into cubes
- 1/2 cup cauliflower florets
- 4-5 french beans
- 1/2 cup peas

1/2 cup green capsicum chopped
Cooking Instructions for making Mixed vegetables sabzi- 2 




Firstly add chopped tomatoes , cinnamon powder, cloves, cardamom pods, almonds blanched and blend well, till smooth, keep aside.
Heat oil/ ghee add bay leaf , cumin seeds when start to crackle, add finely chopped onions
cook till golden, add ginger garlic paste
saute for 1 min, add green chillies paste and mix well, add tomato puree
and mix well, cook until oil comes out.
In a bowl add plain yogurt, kashmiri red chillies powder
, turmeric powder, coriander & cumin powder and mix well, add yogurt mixture in above gravy and mix well, cook for 5 mins, until oil comes out, add vegetables, potatoes halves
, carrot
, cauliflower florets, chopped beans, peas, and mix well, add water
cover and cook for 10 mins on medium low heat, add black pepper powder, salt
and mix well.
Add cream and mix well, green capsicum chopped and mix well, cook until all the vegetables are tender, serve hot, garnish with chopped coriander leaves
