Ingredients for Mr. Dan Dan Noodles
- oili santos
- Crush red pepper flakes
- Seasame oil
- Diced garlic
- meat
- ~1 lb of heavily peppered GROUND PORK (or GROUND CHICKEN)
- noodles
- 8 oz Asian egg noodles
- sauce
- Spoonful peanutbutter
- 1 cup soy sauce
- 1 cup hoisin sauce
- 1 cup chicken stock
- veggies
- 1/2 head spinach (or some other leafy green)
- garnish
- Crushed cashews
- Diced green onion
Cooking Instructions for making Mr. Dan Dan Noodles
Sautee the OLIO SANTO until it’s expressed. About five minutes. Do not burn the pepper flakes. Remove the OLIO SANTO into a safe container.
In the same sautee pan, brown the MEAT in a base of butter. Make sure the MEAT crumbles as you cook it thoroughly. Once browned, splash some rice vinegar to deglaze and add the shallots and mushrooms. Let them cook until fully expressed (about five minutes).
In a separate pot, cook your NOODLES. Season the water with oil and salt per usual. Strain at completion and set aside.
Add the SAUCE mixture to the MEAT, mushrooms, and shallot. Cook on medium high eat until reduced substantially. Add VEGGIES and re-add OILO SANTO. Continue to cook for another 5 minutes.
Add the NOODLES into the sautee pan of MEAT, SAUCE, etc. Make sure to really mix the several ingredients into one another. After cooking on medium to low heat for ten minutes, plate.
Add the GARNISH and serve. LISTO!
