Ingredients for My Mackerel linguine
- 2 fresh Mackerel fillets
- 1 medium onion peeled and diced
- Half a punnet of mini plumb tomatoes
- 10 pitted green olives
- 1 courgette cut in half lengthways and thick sliced
- 1 capsicum pepper (any colour) deseeded and diced
- 6 garlic cloves peeled and chopped
- Half a cup white wine
- 1 lemon
- 200 grams dried linguine pasta
- Grated Parmesan cheese for garnish
- 1 tablespoon fresh chopped parsley for garnish
- Salt and pepper
- Knob butter
- Olive oil
Cooking Instructions for making My Mackerel linguine
Put a pan of water on and when boiling add the pasta to cook as per the packet instructions
In a large saute pan add a splash of olive oil and the butter. When hot but not smoking add the fish, skin side down. Cook for 3 minutes and turn over, cook for another 3 minutes. Place the fish on a tray and keep warm.
Add another splash of oil to the pan and heat up. Add the onions, garlic, courgette, peppers, tomatoes and olives and stir fry for 4 minutes. (if you prefer to spice it up, add a sprinkle of dried chilli flakes to)
Add the wine and continue to stir fry for a further 3 minutes. Season with salt and pepper to taste, and add half the parsley.
Add the pasta and mix all the ingredients together until the pasta is thoroughly coated with the juices.
Divide all of that onto two plates, place a cooked mackerel fillet on top and squeeze lemon juice over the dish
Garnish with grated Parmesan cheese and the remaining parsley.
