Ingredients for No-Bake Biscoff Cheesecake Balls
- 1 cup (about 12-15) Biscoff cookies
- 115 g cream cheese, softened
- 2 tbsp Biscoff spread
- 50 g powdered sugar (optional, to taste)
- 100 g white or milk chocolate (for coating)
- Extra Biscoff cookies, crushed, or sprinkles (for decoration)
Cooking Instructions for making No-Bake Biscoff Cheesecake Balls
Crush the Biscoff Cookies:
Place Biscoff cookies in the Thermomix bowl.
Mix 3 sec / Speed 7 until finely crushed. Transfer to a bowl and set aside.
Blend Cream Cheese Mixture:
Add cream cheese, Biscoff spread, and powdered sugar (if using) to the Thermomix bowl.
Mix 10 sec / Speed 4 until smooth.
Combine Mixture with Crushed Cookies:
Add the crushed Biscoff cookies back into the bowl.
Mix 5 sec / Reverse / Speed 3 until combined and dough-like. (If too soft, add extra crushed cookies.)
Shape the Balls:
Scoop out 1 tablespoon portions and roll each into a ball by hand. Place on a tray lined with parchment paper.
Place the tray in the freezer for about 15-20 minutes to firm up.
Melt Chocolate for Coating:
Place the chocolate in the Thermomix bowl.
Melt 3 min / 50°C / Speed 2, or until smooth.
Coat the Balls in Chocolate:
Dip each chilled cheesecake ball into the melted chocolate, coating fully.
Place back on the parchment paper and sprinkle with extra crushed cookies or sprinkles immediately.
