Ingredients for Octo-vegetarian English pie
- 1 cup diced celery
- 1.5 cups diced carrot
- 1 small onion chopped
- 1 can mushrooms (or 2 cups fresh)
- 4 large russet potatoes
- 1 cup heavy cream (optional)
- 4 tablespoons tomato paste
- 1 envelope onion soup mix
- 2 tablespoons sour cream
- 2 cups cheddar cheese shredded (optional)
- 2 tablespoons butter or 2 tablespoons bacon grease
- 4 tablespoons tomato paste
Cooking Instructions for making Octo-vegetarian English pie
Melt butter or bacon fat in pan and add celery and carrots. Cook over medium high heat about 5 minutes.
Add your onion and cook for another 4 mi uses stir frequently
Add fresh or canned mushrooms and bring down to a simmer covered for about 5 minutes adding tomato paste.
While all that simmering is going on, peal and boil potatoes about 15 min or till fork tender
Preheat oven to 400 and spray a large casserole. Spread the veggies mixture.
Mash your potatoes. I like to add an egg yolk (optional) and cream to my mashed potatoes, but you can use a non dairy option.
Spread mashed potatoes over veggies mixture. Use a fork to make rigges so there are some crispy parts.
Bake uncovered for 20 minutes
Optional add 2 cups of cheese on top of potatoes and broil low for about 5 minutes. Let cool 5 minutes before serving.
