Ingredients for Okra & Frankfurters
- 1 small pack of young okra
- 3 cloves garlic – crushed
- 2 red chillies – crushed & chopped
- 3 frankfurters

- 1 generous pinch white pepper powder
- 1 tsp chicken bouillon to taste
- 1 splash sesame oil (OPTIONAL)
- ✅️ INGREDIENT VARIATIONS
- 1 . Use oyster sauce to substitute chicken bouillon
- 2 . Add a dash of light soy sauce to compliment oyster sauce
- 3 . Use small brown onion. Slice thinly and caramelize them in a pan until translucent before adding garlic, chillies and frankfurts. Caramelized brown onion sweeten any dish
Cooking Instructions for making Okra & Frankfurters
Wash okras whole thoroughly. Drain well.
Heat up a skillet over medium heat. Once heated, dry roast okras for maybe 5 mins tossing regularly until most or all sides of the okras turn bright green. Remove from the heat immediately and leave them to cool.
In the mean time, peel and crush garlic. Crush chillies and chop. Adjust the amount of chillies used to your liking. Next. Slice frankfurts into round disc or coins. Once okras are cool enough to handle, cut off the top heads and discard. Slice cut the rest of the okras to the same round shapes like the rest of the frankfurters. Its best to prep ingredients to almost the same shape and size.
Heat 4 tbsp of neutral cooking oil in a skillet. Before the oil gets too hot, add garlic cloves and chopped chillies. Sauté until garlic cloves are near golden, then add frankfurters. Toss them for a minute then add in okras and stir for few times to mix.
Season with a generous pinch of white pepper powder and chicken bouillon to taste. Keep stirring for another minute or two over medium heat. Taste and adjust seasoning accordingly. Then add a splash of sesame oil. Then turn off the heat. Transfer to a serving plate and serve with rice.
