Ingredients for Okra in sweet chilli sauce
- A. SEASONINGs
- 1 TBSP oyster sauce
- 1 tsp sugar
- 1/2 tsp tamarind paste (pic)
- 1/3 c water + 1/2 tsp corn flour
- 1 pinch salt or as needed
- B. FINELY MINCED (pic)
- 1/2 brown onion
- 1 big red chilli
- 2 garlic
- 1 TBSP FINELY MINCED dried shrimps (soak dried shrimps to soften. Drain the water and then mince)
Cooking Instructions for making Okra in sweet chilli sauce
Prep & measure ingredients for seasonings. Combine & mix corn flour and water. You can use less corn flour if you prefer your sauce less thick.
Prep dried shrimps. Soak, drain water and then mince. Keep aside. Mince chili, onion and garlic. Pic below.
Heat 3-4 tbsp of cooking oil. Add minced garlic, chili and onion and cook for 1 min over medium low heat. Add shrimps. Continue to cook until aromatic and onion is caramelized.
Add corn flour liquid or slurry, oyster sauce, tamarind paste and sugar. Continue to cook and stir until sugar is dissolved and the sauce is thicken. Taste and adjust seasonings accordingly. Turn the heat off. Keep aside to cool down.
When the sauce is cooling. Wash okra. Heat enough water in a pot to boil the okra.
Add a teaspoon of salt and 1 tablespoon of oil to the pot. Bring to a rolling boil.
Add okra, cover for a minute and remove the lid. The okra is ready when it turns bright green and tender, it should be cooked by now. Remove the pot from the heat. Drain and discard the water.
💡 Okra is keep intact to minimize the sliminess. You can cut the top part once they are cooked.
Serve okra with the sauce.
