Ingredients for Onion soup
- 4 brown onions
- 100 g unsalted butter
- 1 French baguette
- 70 g parmesan cheese
- 3 cloves garlic
- 3 tbsp red or white wine vinegar
- 2 tsp peppercorn
- 2 tbsp sugar
- 1 shallot
- 1/2 cup apple cider vinegar
- 1 bunch fresh thyme
- 1 potato
- 750 ml chicken stock
- 1/2 cup double cream
- 1 green apple
Cooking Instructions for making Onion soup
Slice the onion nice and thin.
Put the butter in the pan and onion in and cook it slowly – 20 minutes.
Cheesy croutons:
Get 1 fresh baguette and cut nice thin slices.
Put cheese on the top and grill it for a few minutes. It should end up with golden cheesy croutons.. set aside and let it cool.
In this stage, the onion getting nice colour, take it out a little bit for garnish.
Season it with the salt and set aside.
Put garlic slices into the brown onion and cook it on a low heat.
Pickle shallot:
Slice 1 shallot into nice slices.
Put together in the small pot, water, red wine vinegar, peppercorn, salt and sugar. Bring it to the boil and mix it with shallot slices and leave it to cool down on the side.
Back to the onion who has golden colour now, deglaze it with apple cider vinegar. Put fresh thyme and season it with salt and reduce it by half.
Add the chopped potato and chicken stock and cook everything for 15 minutes or until the potato is soft.
Add the cream and bring it to the boil.
Take out all the thyme and blitz it in the blender for 5 minutes at maximum speed. Strain the soup with the strainer and the soup is ready
Slice and cut nice sticks of the green apple and keep the apple sticks in the water with lemon juice.
