Ingredients for Orange sponge cake 🍊 (bizcocho de naranja)
- 1/2 cup fresh orange juice (125gr)
- 1 1/4 cups white sugar (250gr)
- 1/2 cup light olive oil (125gr)
- 2 1/2 cups all-purpose flour (300gr)
- 1 packet baking powder (0.35 oz or 1 tablespoon)
- 1 pinch salt

First, let’s turn on the oven to 350°F (180°C) so that by the time the mix is ready to bake, the temperature will be perfect! In a bowl or in a pot like my mum did, we’ll crack four whole eggs and add the white sugar.
Then we’ll squeeze the orange juice and add it to the other ingredients in the bowl/pot.
Now, we’ll measure and add the light olive oil. You can also use canola or sunflower oil since we need a mild-flavored oil.
Next, we’ll add the flour, baking powder, and a pinch of salt to enhance the flavor.
We’re going to mix everything with a mixer. If you’d like more orange flavor, you can add the zest of one orange. Next, we’ll take a round mold and line it with parchment paper. Place the batter in the mold, then bake it in the oven—be sure not to open the oven until the cake has fully risen.
Then, you can turn on the top heat to get a beautifully browned top! To check if it’s done, poke it with a toothpick—if it comes out clean, the cake is ready.
