Ingredients for Plum cake with buttercream
- 11/2 cups all purpose flour
- 11/2 tsp baking powder
- 1/2 tsp cinnamon powder
- 1/8 tsp nutmeg powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1/2 cup whole milk
- 4-5 pitted plums chopped
- 3-5 tbsp thin layer of mixed fruit jam (or your choice of jam)
- For buttercream frosting:,
- 1/2 cup unsalted butter at room temperature
- 1 tsp vanilla extract
- 21/2 cups powdered sugar
- 2 tbsp milk
Cooking Instructions for making Plum cake with buttercream
Preheat oven at 180°c, lightly grease round cake tin and line the bottom with parchment paper and keep aside. In a large bowl add all purpose flour, baking powder, cinnamon powder, nutmeg powder and salt mix well and keep dry ingredients aside, in a bowl add unsalted butter and sugar beat on medium speed until pale and fluffy about 3 mins, add eggs and vanilla extract, beat until very well combined. Scrape down the bowl with the mixer on low speed, gradually add the flour mixture in 3 parts.
Alternating with the milk between each addition of the flour, add chopped plums in a mix gently, transfer the batter to the prepared cake tin and smooth the batter with a spatula, bake for 55 mins, until the top is golden brown or inserted a toothpick in the center comes out clean, let the cake cool in the cake tin for 10 mins. For buttercream frosting: in a bowl add unsalted butter and powdered sugar beat well, add milk, vanilla extract and beat until well combined and keep aside.
Cut cake into 2 halves and spread thin layer of mixed fruit jam on one half cake, cover with the remaining half cake, spread the buttercream frosting and decorate the cake as your desire. Serve with a hot cup of coffee, freshly brewed tea or a glass of milk.
