Ingredients for Pork & Vegetables in a Lightly Spiced Clear Broth (Turmeric – Garam Masala)
- 1/4-1/2 k pork ribs or your fave cut
- 1 large potato, sliced
- 1-2 tomatoes, sliced
- 1 handful green beans, prepped and cut
- 1 bunch Leafy Vegetables, you can use : cabbage, pechay, wombok, bokchoy, spinach
- 1/3 tsp or 1/2 tsp Turmeric powder
- 1/3 tsp or 1/2 tsp Garam Masala powder
- 1 pc pork broth cube
- 1 Tbsp fish sauce (Patis)
- 3 pinches peppercorns
- 2 pcs large (dried, herb) bay leaves
- Salt and pepper to taste
- 5 cups or as needed water
- 1-2 Tbs Cooking oil for sauté
Cooking Instructions for making Pork & Vegetables in a Lightly Spiced Clear Broth (Turmeric – Garam Masala)
Boil water and drop in pork pieces to make it tender. Pork should be submerged. Boil 30m-1hr or you can pressure cook. Discard water or strain to remove smut (use for broth if you want).
In a pan, sauté garlic and onions in oil. Then add in boiled pork pieces. Season with salt, pepper and fish sauce. Turn pieces with spatula turner. Do this a few minutes.
Meanwhile in a separate pot, boil 3-4 cups water (new to keep cholesterol low, or use the broth you set aside) with bay leaves, peppercorns, pork broth cube and add your potatoes.
Add a few tablespoons of the boiling water (to rinse) in the pan then pour and transfer all of it to the pot with potatoes.
Continue cooking until the potatoes are cooked. Then begin to add your vegetables – beans and tomatoes first, then after a few minutes, the stalks and the leafy veggies.
Sprinkle in the turmeric powder and Garam Masala. Stir lightly and then taste, adjust seasoning, add more fish sauce or salt or broth cube.
Serve hot with rice on the side or pour broth over rice. Enjoy!
