Ingredients for Potato veggies soup 🥔🥕🫛🥬
- 1 tbsp butter 🧈
- 1 tsp finely chopped garlic 🧄
- 1 tsp finely chopped ginger 🫚
- 2 spring onions finely chopped green & white
- 2 finely chopped carrots 🥕
- 3 tbsp fresh peas 🫛
- 4-5 chopped french beans
- 3 tbsp finely chopped spinach/ baby spinach 🥬
- 1 tbsp red cabbage shredded for garnish
- 3-4 tbsp cabbage shredded
- 4-5 peeled whole baby potatoes 🥔
- 1 tsp apple cider vinegar
- 1/2 tsp black pepper powder
- 1 bay leaf 🍂
- 1/2 tsp red chilli flakes 🌶️
- 2-21/2 cups vegetable stock
- 1 tbsp corn flour 🌽
- 1/4 cup water 💦
Cooking Instructions for making Potato veggies soup 🥔🥕🫛🥬
Rinse the veggies thoroughly and chop them finely, keep aside, chop ginger 🫚and garlic 🧄.
Heat butter 🧈 in a soup pot, add bay leaf 🍂 saute for 1 sec, add chop garlic 🧄 cook till golden, add chop ginger 🫚 saute for 1 sec, then add spring onions (white) for 1 min, add all veggies (whole baby potatoes 🥔, carrots 🥕, french beans, cabbage shredded, peas 🫛, spinach/ baby spinach 🥬, spring onions green) saute for 2 mins on high flame.
Add black pepper powder, salt 🧂, mix well. Pour in vegetable stock cook until veggies are slightly tender, add apple cider vinegar, mix well. Stir corn flour in water mix well, pour in the soup, let it boil, cook stirring constantly until it turns slightly thick, remove from the oven and serve hot with sandwich or cheese toast.
Garnish with red cabbage, red chilli flakes🌶️, parsley 🌱
