Ingredients for Potatoes and plantain porridge with vegetable
- Potatoes (amount per serving)
- Plantain (3-5)
- Fresh Tomatoes (pounded or grated)
- Fresh pepper (pounded or grated)
- Onion (pound or grate along with tomatoes and pepper)
- Fresh Titus fish (other options can be used) cut to sizes
- Fresh sliced spinach
- Palm oil
Cooking Instructions for making Potatoes and plantain porridge with vegetable
Cook fish with spice in a separate pot
Separate the fish from the stock when done
Peel potatoes and cut in small pieces
Put potatoes in a big pot and add water to cover the potatoes a little and cook
When the potatoes is half soft, cut plantain in bits and add to it then cover and allow to cook. Ensure the water is enough to cook without drying off
Add the pounded pepper, tomatoes and onion to the cooked potatoes and plantain while still on fire. Cover and allow for about 2mins
Then add the fish stock and the fish and cover for about a minute
Add spices of your choice, salt and palm oil (in moderate quantity) and allow to cook till it becomes a bit thick
Use your spoon to turn and mash gently until it becomes more thick then add spinach and cover
Allow to cook for another about 5mins
Use cooking spoon to mix very well and turn off heat
Serve and enjoy
