Ingredients for Pumpkin and Managu Vegetables
- Pumpkin leaves 2 bunches
- 2 bunches Managu
- Onions
- Salt
- Oil
- 300 ml Milk
- Cooking cream 200ml(optional)
- 300 ml Butter milk
Cooking Instructions for making Pumpkin and Managu Vegetables
Select your pumpkin and managu leaves.For the pumpkin leaves,Remove the thread like strings from the stalk.From the tip of the stalk,start pulling down and the thread will come out.I do this to remove the chewyness from the vegetable.
Cut them into small pieces
Clean the two very well,to remove all the sand,soil etc.
I steam mine for at least 3-5 minutes.
Cut your onions,put in a sufuria and add oil.Brown your onions and add salt.
Then add your vegetables,don’t add the steamed down water.You can use it to prepare your vegetable stock.Keep stirring at interval until you reach this stage👇.Taste for salt
Add your butter milk and cook slightly again.
At this stage your vegetables is ready to be served,but as for me I take it further to the next level.
The 2nd day,I add milk and slightly heat the vegetables again and keep until the 3rd day.
On the 3rd day, I add cooking cream and keep again,for the 4th day.Then am ready to serve.
Serve with any accompaniment of choice.
