Ingredients for Punjabi okra salad 🥗
- 10 fresh okras (lady fingers) cut into small round pieces
- 1/2 cup fresh oregano 🌱
- 2 red chilli chopped 🌶️
- 1/2 tsp black pepper powder
- 1/2 tsp paprika powder 🌶️
- 1-2 small onions 🧅 cut into thinly slices
- 1/2 tomato 🍅 cut into small diced
- 1 tsp black peppercorns
- 1/2 tsp cumin seeds
- 1 tsp finely chopped garlic 🧄
- 2 tbsp oil
- For Punjabi dressing:
- 11/2 tbsp vegetable oil
- 1/2 tsp sugar to keep okra into natural green colour
- 2 tbsp white vinegar
- 1/2 tsp finely chopped garlic 🧄
- 1/4 tsp black pepper powder
- Salt to taste 🧂
Cooking Instructions for making Punjabi okra salad 🥗
Cut okras (lady fingers) and chop into small pieces, keep aside. Heat oil, add black peppercorns saute for few seconds, add cumin seeds when started to crackle add chopped garlic 🧄 and mix well, cook till lightly brown, add chopped okras (lady fingers) and mix well, add black pepper powder mix well, cook okra till tender, remove and keep aside, let it cool completely.
In a plate thorn fresh oregano,add chopped red chilli mix together, add cooled okra mixture in and mix well, add thinly sliced onions, tomato diced and mix well, add and pour Punjabi dressing and mix gently. Serve immediately.
For Punjabi dressing: in a bowl add, vegetable oil, white vinegar, sugar, salt, finely chopped garlic and black pepper powder mix together and dressing is ready.
Note & tip: use fresh herb to make Punjabi salad, I kindly recommend that do not use dry herbs in this recipe. Serve as appetizer or serve with toasted bread slices in breakfast, for quick serving.
