Ingredients for Punjabi Potatoes, onions pakoras curry🥔🍅🧅
- 1 cup Gram flour pakoras (homemade or ready made), big sev
- 3 tbsp sunflower oil 🌻+ shallow frying
- 4-5 whole baby onions
- 3-4 finely chopped onions 🧅
- 1 Fresh tomato puree 🍅
- 3-4 potatoes 🥔 cut into halves
- 1 tbsp tomato paste (ready made)
- Salt to taste 🧂
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp kashmiri red chillies powder 🌶️
- 1/2 tsp coriander & cumin powder
- 2 tbsp chopped coriander leaves
- 1 tbsp spring onions (green part only) finely chopped
- 1 tbsp ginger- garlic paste 🧄
- 1 tbsp green chillies paste
Cooking Instructions for making Punjabi Potatoes, onions pakoras curry🥔🍅🧅
Heat 3 -4 tbsp oil for shallow frying: add halves of potatoes 🥔,fry them until golden, remove on paper napkin, keep aside, in same oil add baby onions, fry them too, until golden, remove them on paper napkin, keep aside.
Heat oil, add cumin seeds, when start to crackle, add finely chopped onions 🧅, cook until golden, add ginger – garlic paste, green chillies paste mix and cook for 1 min.
Add fresh tomato puree 🍅, ready made tomato paste, salt🧂and mix well, cook until oil comes out, add spices (kashmiri red chillies powder 🌶️, coriander & cumin powder, turmeric powder) mix well, again cook all the masala well, add little chopped coriander leaves mix well.
Add fry potatoes 🥔, fry onions, add water cook on medium flame, add gram flour pakoras mix well. don’t over them, make a thick gravy, serve hot with plain rice 🍚, Indian flat bread.
Garnish with chopped coriander leaves and spring onions (green part only).
Note: it’s Kindy recommend that when adding water to your gravy check your gravy consistency, if you like thin or thick, adjust 1/2 cup of water only, Don’t cover.
Or else you will break the pakoras completely.
