Ingredients for Red Velvet Cupcakes
- 115 g Butter (unsalted of course or preferably baking butter)
- 150 g Caster Sugar
- 3 Eggs
- 120 ml Vegetable Oil
- 1 TBSP White Wine Vinegar
- 2 TSP Vanilla
- Tsp Food Colouring
- 240 ml Buttermilk
- 300 g Plain Flour
- 15 g Cocoa Powder
- 1 tsp Baking soda
- 1/2 tsp Salt
- Icing
- 80 g Butter
- 145 g Cream Cheese
- 1 Tsp Vanilla
- 325 g Powder Sugar
Cooking Instructions for making Red Velvet Cupcakes
We’ll start with the icing. Begin by adding 80g of softened butter into bowl & add in 145g of cream cheese. Add 1 Tsp of Vanilla & Mix (best results with electric mixer) then refrigerate until use.
Making the Cupcake: Begin by melting 115g of Butter
Add 150g of Caster Sugar
Whisk until they’re combined
Add in eggs gradually eg. 1 egg, then mix and repeat. (3 in total)
Add in 120ml of Vegetable Oil
1 Tbsp White Wine Vinegar
1 tsp Vanilla
Add few drops of red food colouring
Mix until combined
Add in 240ml butter milk
Gradually over a sieve, add in a 325g of Powder sugar, 15g of Cocoa powder, 1tsp baking powder & 1/2 tsp salt.
Fold until mixed (if not smooth enough then use mixer)
Scoop into cupcake cases but don’t overdo it because it could overflow.
Bake at 160C (fan) for 20min
