    Remove the skin off of the onion and chop into 4 chunks

    cut the peppers into chunks, removing the seeds

    Cut the aubergine into chunks

    Peel the garlic cloves and slice thinly

    Pre heat the oven to 200 degres. Add all of the prepared vegetable and the tomatoes into a dish and drizzle a little bit of oil over the top. Cook for around 25 mins until all the vegetable is soft, if not then cook for another 5.

    When the vegetable is cooked then add it to a saucepan to blend with a soup blender or add to a blender jug

    Blend the vegetable until its all smooth and then add in the pasatta, the prepared stock, puree and spices and blend until combined.

    Heat until warm through out or pour straight into tubs for the freezer.
