Ingredients for Roasted Vegetables, Alphabet, and Sausage Soup
- Vegetables and seasoning
- 1 pound turnip root
- 1-1/2 pounds gold potatoes
- 1/2 pound red potatoes
- 1-1/4 pound zucchini
- 1-1/3 pound yellow crooked necked squash
- 1/2 cup balsamic vinegar divided
- 2 sticks butter divided
- 6 ounces baby carrots
- 2 teaspoon salt divided
- 2 teaspoon ground paprika divided
- 2 teaspoon ground black pepper divided
- 2 cups chopped onion
- Sausage
- 1-1/4 pound smoked sausage
- 12 ounces andouille sausage
- 1-3/4 pound mixed meat sausage
- Soup base and additional ingredients
- 1 quart chicken stock
- 30 ounces diced tomatoes
- 15 ounces tomato sauce
- 21 ounces alphabet pasta
- 1 tablespoon Italian seasoning
- As needed salt
- As needed ground black pepper
- 1 quart water
- 1 teaspoon ground allspice
- 1 teaspoon ground cardamom
- 1 teaspoon ground coriander
- 2 pounds smoked pork neckbones
Cooking Instructions for making Roasted Vegetables, Alphabet, and Sausage Soup
Wash, peel, and chop the turnips and carrots. Preheat oven to 450° Fahrenheit.
Wash, peel, and dice the potatoes. Chop the onion. Add these to a pan sprayed with nonstick spray. Drizzle with olive oil. Season with half the spices and half the balsamic vinegar. Cut the butter into pats and add to top of veggies. Put into the oven. These vegetables are more dense and takes longer to roast. Roast for 35 minutes.
Wash and chop the squash and zucchini into bite size pieces.
Season with the rest of spices, oil, butter, and vinegar for vegetables. Put into the oven for 15-20 minutes.
Take the sausages and remove the casing.
Slice them and add to a pot, along with the neckbones. Lightly sear the meats. Add water, continue to cook, and cover.
After an hour add the tomato products, stir. Add in the spices. Take the neckbones out and remove the meat off the bones. Add the meat back to the soup base. Cook 30 minutes. Add the root vegetables.
Add the pasta and roasted squash and zucchini, along with the juices. Taste and add salt and pepper to taste if needed.
