Ingredients for Savoury minced beef and mashed potatoes with creamed carrots and swede
- 450 g minced beef
- 170 g diced onion
- 140 g diced carrots
- 130 g frozen grean beans
- 100 g chopped celery
- 3 garlic cloves peeled and chopped
- 3 tablespoons oil
- 1 teaspoon chopped oregano
- 1 teaspoon chopped sage
- 1 tablespoon smoked paprika
- 440 g can of plumb tomatoes
- 1 beef oxo cube
- 1 knorr red wine stock cube
- 1 glass red wine
- 1 cup water
- 1 handful fresh chopped parsley
- 500 g potatoes peeled and diced
- 90 g butter
- 300 g carrots peeled and chopped
- 200 g swede peeled and diced
- 4 slices white bread
Cooking Instructions for making Savoury minced beef and mashed potatoes with creamed carrots and swede
Prepare potatoes, place in a saucepan and cover in water. Do the same with the chopped carrots and diced swede placing them together in the same pan. Bring both pans to a boil and simmer until cooked.
At the same time add the oil to a heavy bottomed pan (I use my wok) over a flame. When hot add the diced carrots, onions and garlic. Stir frying for 5 minutes. Add the celery and continue to fry for another couple of minutes.
Add the minced beef and continue to fry until the meat has coloured. Add the oregano and sage and crumble the oxo cube into the mix.
Add a can of plum tomatoes and break them up while stirring the mix together.
Add the paprika, the glass of wine, the cup of water and the knorr stock cube. Reduce the heat to a simmer stirring regularly. Continue to do this until the sauce starts to thicken. Add the green beans and continue to stir. Add salt and pepper to taste. Add the fresh parsley to the mix.
Drain the potatoes and add seasoning and butter and mash the potatoes together.
Do the same with the carrots and swede.
Place a portion of the mashed potato and the carrots and swede onto a suitable dish (I used a bowl) add a potion of the mince to it. Garnish with fried triangles of bread and serve.
