Ingredients for Scottish traditional breakfast “Tattie scones”
- 700 gm potatoes
- 45 gm Butter
- 240 gm self raising flour
Cooking Instructions for making Scottish traditional breakfast “Tattie scones”
Peel the potatoes and cut into equal size pieces. Place in a pan and cover with cold water. Bring to the boil and then simmer until the potato “breaks” with a fork.
Drain the potatoes using a wire mesh kitchen sieve and allow to drain completely.
Transfer the potatoes to a bowl, add the butter and mash using a hand held masher. Season the mash with salt and pepper. Add the flour and fold in using a wooden spoon until it forms a dough like consistency. (at this point mix in any personal flavours you wish but keep the dough as dry as possible)
Turn out the dough onto a well floured surface and gently knead to make a ball out of the mixture. Divide it into 3 equal portions.
Using a rolling pin, roll each portion to resemble a pizza base approx 6mm thick. Cut each one into four wedges and place into a very hot “DRY” thick bottomed skillet. Allow the scones to cook turning frequently until you get the desired colour on both sides.
Repeat the cooking process until all scones are done and either allow to cool to consume later or serve hot with your favourite cooked breakfast.
