Ingredients for Spicy Mapo Tofu with Shiitake Mushrooms 🌶️
- 300 grams Firm Tofu, cut into cubes
- 180 grams Salmon, cut into cubes
- 85 grams Shiitake Mushrooms, sliced
- 3 cloves Garlic, chopped
- 1 stalk Spring onion, separated whites and greens)
- 3 Thai Chillies, chopped
- 1.5 tbsp La Doubanjiang/ Fermented Chilli Bean Paste
- 2 tsp Sugar
- 1.5 tbsp Soy Sauce
- 250 ml Water
- 1 tsp Sichuan Pepper Grounded
- 2 tbsp Corn starch
Cooking Instructions for making Spicy Mapo Tofu with Shiitake Mushrooms 🌶️
In a hot pan, drizzle in some oil and add the sliced whites part of spring onion, chopped garlic, and chopped thai chillies. Mix it well. Then added a sliced of shiitake mushrooms. Sauté together for 1-2 minutes or until fragrant.
Add in a Salmon cubes, Doubanjiang, sugar, soy sauce, and Sichuan pepper ground. Sauté for 1-2 minutes.
Gently add in the tofu and pour in water. Let it sizzle for 2-3 minutes, occasionally stirring to soak up all the sauce.
Finally, add a mixture of cornstarch and cold water to thicken the consistency before serving. If u like it thicker, add in more cornstarch. Let it simmer for another 1-2 minutes, so it thickens. Garnish with the sliced of green parts of spring onion.
