Ingredients for Stuffed butternut squash🍅🧅🌶️
- 2 small size butternut squash
- 2-3 finely chopped onions 🧅
- 1 big size finely chopped tomato 🍅
- 1 tbsp ginger-garlic paste 🧄
- 2 tbsp finely chopped coriander leaves 🌿
- 1 tbsp green chillies paste
- 1 tsp kashmiri red chillies powder 🌶️
- 1 tsp cumin seeds
- 1-2 finely chopped green chillies
- 1/2 tsp turmeric powder
- 1 tsp coriander & cumin powder
- 2 tbsp oil + oil for shallow frying
Cooking Instructions for making Stuffed butternut squash🍅🧅🌶️
Pre heat oven at 180°c,Cut butternut squash into halves, scoop the pulp out, discard the seeds and keep aside. Shallow fry them, until golden brown, remove on kitchen napkin and keep aside.
Heat oil, add cumin seeds when start to crackle, add finely chopped onions 🧅, cook till golden, add ginger garlic paste 🧄 mix well.
Add finely chopped tomato 🍅, salt and mix well, add kashmiri red chillies powder 🌶️, turmeric powder, coriander & cumin powder,green chillies paste and mix well, cook for 3 mins, add scooped pulp in and mix well, add little finely chopped coriander leaves 🌿 mix well, stuffing is ready.
Take fried butternut squash halves and stuff in the filling, add halves on baking tray and bake for 5 mins, serve hot, garnish with finely chopped coriander leaves 🌿, finely chopped green chillies.
