Ingredients for Stuffed sardines in tomatoes

5 medium size tomatoes

1 tbsp Ginger-garlic paste
/ chopped

Salt to taste

2 small size green peppers chopped

3 finely chopped onions

5 scooped tomato pulps,,
- 1 finely chopped green chillies
- 1/2 tsp black pepper powder
-
1 tsp kashmiri red chillies powder
- 1 /2 tsp coriander & cumin powder
- 1 tsp cumin seeds
- 2-3 tbsp oil+ 2 tbsp for shallow frying
- 1 cup minced sardines canned

2 tbsp Fresh grated coconut,

2 tbsp finely chopped coriander leaves
Cooking Instructions for making Stuffed sardines in tomatoes 

Wash and clean tomatoes , pat dry them on kitchen towel, cut and remove pulp from tomatoes
, keep tomatoes pulp separately.
Cut all the remaining ingredients, onions , green peppers
, ginger garlic, green chillies, coriander leaves
.
Heat oil, add cumin seeds when start to crackle, add chopped ginger & garlic cook till golden, finely chopped onions cook till golden, add tomato pulp
and mix well.
Add black pepper powder, salt, green chillies chopped and mix well,cook for 1 min, add kashmiri red chillies powder , coriander & cumin powder, fresh grated coconut mix well, stir cook for 3 mins.
Add minced sardines with it juice and mix well, cook until the juice is dried out. Finally add chopped green peppers and mix, cook for 1 min, remove from flame, stuffing is ready.
Take tomatoes shells and fill in the stuffing, heat oil and arrange them in oil and fry them. Donβt cover them, cook until tomatoes are soft and serve immediately.
Note:Due to power cut, I just over cooked the tomatoes, itβs kindly recommended that you should remove 4 mins lately or when tomatoes are soft and serve.
