Ingredients for Taiwanese Golden Pickled Cabbage
- 500g Cabbage
- 15g Salt
- Marinade
- 30ml Sesame oil
- 120g Carrot
- 150g Apple
- 20g Garlic
- 80g Fermented bean curd
- 100g Apple cider vinegar
Cooking Instructions for making Taiwanese Golden Pickled Cabbage
Rinse the cabbage and chop it into large chunks.
Add salt equal to 3% of the total cabbage weight (15g). Mix well until the cabbage starts to soften slightly, then let it sit for 30 minutes.
Now, let’s make the marinade:
Chop the carrot and apple into chunks. Place the rest of the ingredients into a food processor or use an immersion blender to blend them into a puree.
Make sure to do a taste test and season to your liking.
Gently squeeze the cabbage after resting to remove excess water.
(Remember to do a taste test! If you prefer a milder flavor, you can quickly rinse the cabbage with drinking water to wash away some of the salt.)
Mix the cabbage with the marinade, ensuring it’s evenly coated.
