Ingredients for Tee’s special Melon soup (egusi)
- 2 cups grounded egusi
- 500 g Assorted
- 1000 g chicken
- 3 red bell pepper
- 4 big onions
- 5 medium tomatoes
- 10 cayenne peppers
- 6 big scotch bonnet pepper
- 2 cups grounded crafish
- 7 stock cubes
- 2 tablespoons salt
- 2 tablespoons locust beans (iru)
- 1 cup red oil
- 4 cups shredded spinach (ugu)
- 1 tablespoon curry and thyme
Cooking Instructions for making Tee’s special Melon soup (egusi)
PREP PROTEIN
In a pot, cook the assorted meat and chicken with 1 scotch bonnet, 1onion, seasoning cubes, Curry, Thyme and salt for 30 minutes.
PREP PEPPER BASE
Prepare pepper base by blending all the peppers into a rough paste.
PREPARE EGUSI SOUP
– In a pot, heat the palm oil,add the washed locust beans (iru) and add the egusi paste. Stir fry for about 5 minutes until the egusi is really fried and clumpy.
Make egusi paste by mixing the grounded melon with stock water from the protein and chopped onions. Make sure paste is slightly thick.
Add the roughly blended pepper, a little bit of the stock and allow to boil for 10 minutes.
Add the blended crayfish and the protein, mix to incorporate,add seasoning and salt according to taste. Cover to cook for 10 minutes
Add the chopped spinach and cook for additional 3 minutes.
Serve the egusi soup with pounded yam, or any other swallow of your choice.
