Ingredients for Tofu Chunk Couscous


  1. 11/2 pack Couscous
  2. 2 cooking spoons of sun flower oil
  3. 1 bowl chopped cabbage
  4. 2 chopped green bell peppers
  5. 1 cup chopped carrots
  6. 2 cups tofu chunks (awara)
  7. 1 cup Tomato paste
  8. 4-5 pieces Scotch bonnet or as desired
  9. 1 small bowl of spring onions
  10. Pinch salt
  11. 4 cubes seasoning
  12. 1 TBS curry powder
  13. 1 TBS thyme
  14. 1 TBS cinnamon powder
  15. 3-4 TBS sesame oil
  16. 11/2 bowl water. Note: The ratio of water to your couscous is 2:1. I.e if couscous is equivalent to 1 liter bowl then the water should be 2 litre bowl

Cooking Instructions for making Tofu Chunk Couscous

    Set all ingredients, chop cabbage, carrot, spring onions, carrot, green peppers. Stir fry tofu chunks lightly

    We are going to use 2 cooking spoons of oil for this meal, firstly for this stage we are using half of the oil(that is 1 cooking spoon of oil) to Saute onions and garlic then pour in the couscous

    Add the cinnamon, thyme into the couscous and stir fry on medium heat. This stri fry prevents the couscous from being mushy and gives it a nice texture.

    Note: you must be on top of the situation stirring because it can easily burn. So stir continuously for like 8 min

    This is our aftermath, a bit crispy. Then keep aside. Note even if you are cooking white couscous, stir fry it with oil for a while and add required water to have a non mushy white couscous

    Add the remaining 1 cooking spoon of oil and add your tomato paste, blended Scotch bonnet and fry for a while then add curry, Maggi and salt

    Add required water, note the measurements of water is very important, 2:1 as explained earlier in the ingredients column. I’ve tried this recipe several times and it works well, cover and allow to boil.

    Then add the boiling tomato soup into the stir fried couscou, add slightly fried tofu chunks, green peppers and carrots and allow to cook on medium heat for 5 min

    Couscous takes just few minutes to be done, approximately 5-7min.

    Add the cabbage and spring onions, cover and allow to simmer for 2-3 min in medium heat. Note medium heat is the best, to avoid burning

    After then sprinkle sesame oil mix and serve.
