Ingredients for Traditional Homemade Pesto Pasta
- 2 handful fresh basil
- 1 medium garlic clove
- 1.5 tablespoons toasted pine nuts
- 3 tablespoons olive oil
- 1 salt and pepper to taste
- 2 basil leaves for garnish
- 1.5 tablespoons for Parmesan (and a little more for garnish)
Cooking Instructions for making Traditional Homemade Pesto Pasta
In a food processor or blender, combine all ingredients except garnish and olive oil.
Begin to process or blend and slowly pour olive oil through the top of your food processor or blender. If you don’t have a part where you can stream it in, add the olive oil in before hand and add as necessary throughout the process.
Continue blending until you have a nice uniform paste, everything should be combined nicely. Add a touch more of salt if needed, tasting first.
Cook your pasta in a salted pot. Place your pesto into a heatproof mixing bowl. Once the pasta is cooked grab the pasta using tongs (carefully) and place into the mixing bowl. Slowly add 1-3 tablespoons of pasta water and stir vigorously to form a slight creamy sauce. Do not over do it because it will become too wet, if this happens, take the pasta out and reduce in a pot for a small amount of time on a low heat.
Mix well and serve immediately with Parmesan and a couple basil leaves (and black pepper if you want!) enjoy!
