Ingredients for Vegetable Cutlet
- Potato as required
- 1 cup chopped mixed vegetables
- 2 tbsp chopped parsley
- Coarsely ground pepper and onion
- 1 tsp ginger -garlic paste
- 1 tsp curry powder
- 2 eggs beaten
- 1 cup breadcrumbs
- Seasoning cube of choice
- Pinch salt
- Oil as required
Cooking Instructions for making Vegetable Cutlet
Boil the potatoes until they are tender. Once cooked, drain the water and let the potato cool down. Peel the skin off and mash the potatoes
Steam the chopped mixed vegetables and make sure to squeeze the veg. to take out excess water and pat dry
Mix all the ingredients together. Stir fry the pepper onion mix, ginger and garlic paste and pour over the mashed potatoes along with other ingredients together including the curry powder Adjust salt and add seasoning to your taste
Beat your egg and set aside. Season your breadcrumb with pinch curry n black pepper and set aside
With oiled hands, scoop the mixture and shape into flat round patties about 1/2 inch thick
Dip each patties in each and roll in breadcrumbs, dip back in egg n the breadcrumbs again
Heat oil in pan about 1½ inch oil. Fry the prepared patties in hot oil (in batches) until brown in colour. Drain and serve
Can pair with tomato ketchup on side
