Cooking Instructions for making Vegetable egg sauce
Wash and cut spinach in a clean bowl,boil water in a pot,add little salt to spinach and pour the hot water on it to soft,drain from hot water,re-fresh with cool water and set aside in a colander
Add in fresh tomato and pepper with little water into blender and blend coarsely(you can also cut into cubes or as desired)
Place a pot on fire with veg oil,saute onion and pour in blended tomatoes and stir fry for 3min,whisk egg in a separate bowl,add little salt to d egg and pour in d pepper,stir again to avoid sticking,add maggi cubes and allow to cook for 3min
Pour in already washed spinach, correct seasoning and mix vegetable to incorporate with eggs,cover and allow to summer for 3 min
Drop from fire and serve sauce with white rice,spaghetti, boiled yam or boiled potatoes
