Ingredients for Vegetable pasties
- The peeling of 400g of Carrots
- 1 (One) whole raw Swede (once cooked don’t use all)
- 500 g peeled Maris Piper Potatoes
- 2 sticks Celery (optional)
- 2-3 medium sized Brown Onions
- 2 tbsp. Olive Oil
- Salt and Black Pepper or 3 tsp. Mild Curry Powder
- For the Shortcrust Pastry
- 600 g Plain Flour
- 500 g block of Unsalted Butter
- 2 tsp. Salt
- 4 tbsp. cold water
Cooking Instructions for making Vegetable pasties
The roasted Vegetables were cooked the previous day over a Period of 2 hours. The Carrots and peeled Swede big chunks were cooked in a bit of Vegetable Oil for One hour on their own at Gas Mark 7 in the oven and then for the last One hour I roasted the peeled potatoes. Allow too cool in the Roasting Tin with Kitchen Foil over the top
Make the homemade Shortcrust Pastry, so put the Plain Flour and Salt either in your Kenwood Attachment Mixing Bowl or another large mixing bowl and then cube the Butter into small pieces and then use your Fingers too rub together the ingredients into a fine breadcrumb texture and then add the cold water. Use the Kenwood Dough Hook Attachment too blend into a ball, or use floured Hands too form into a ball
Dust with Plain Flour if needed and then wrap in Clingfilm and allow too rest in the Fridge for 2 hours
Next step is too shallow fry small diced onions for 3 minutes and very thin small sliced bits of Celery if using and then chop the cold cooked Carrots and Swede into the non-stick Frying Pan and then heat through for a little while and then add the seasoning – Salt and Black Pepper or Salt and Mild Curry Powder and then on a Plate use a Dinner Fork or small sharp Kitchen knife too mash or finely chop the cold cooked potatoes and then add too the mix. Allow too cool
Preheat the oven to Gas Mark 6.
Flour the Kitchen side with Plain Flour and then roll out your pastry with a Rolling Pin and then use a 11cm round pastry cutter or blob One and a half tablespoons of the Pie filling onto the Pastry and then cut with a small sharp Kitchen knife and then fold and seal with a egg wash, once done egg wash the top and side’s and then eventually bake them all on Baking Parchment Paper on a Baking Tray at Gas Mark 6 for 20 minutes – maybe longer
