Ingredients for Vegetable plombs with chicken sauce
- For the vegetable plombs
- 1/4 cup oil
- Red pepper (chopped)
- Thinly sliced carrots
- 1/2 fennel seeds
- 2 seasoning cubes
- 1/2 tsp curry
- For the sauce
- 1 medium chicken
- 2 green bell pepper (chopped)
- 10-12 scotch bonnets (grated)
- 1 large onion (chopped)
- 2 garlic cloves (crushed)
- 1/2 tsp garam masala
- 3 scallions (chopped)
- Few carrots (chopped)
- 1 lemon
- 2 bay leaves
- Vegetable oil as required
Cooking Instructions for making Vegetable plombs with chicken sauce
In a sauce pan,heat up some oil,add in your Carrots,green pepper and fennel seeds
Add seasonings,curry and thyme heat up for about 4-5 minutes
Add the cooked plombs and stir well until everything is combined…then take off the heat and serve with any sauce of your choice
To make your chicken sauce…squeeze some lemon juice in your chicken add seasoning,spices and mix well and marinate for 20mins.this help the chicken to absorb that tangy flavor from the lemon..transfer the chicken to a pan and cooked for a couple of minutes or until the chicken is almost
In a separate pan,heat the vegetable oil and slightly fry the chicken,in the same pan stir in your onion,garlic,scotch bonnets,chicken broth and cook for 5mins,add in your seasoning,green pepper,scallions and carrots for few minutes turn off the heat serve hot and enjoy
