Ingredients for Vegetable Pulaw
- 500 gm rice (soaked into water for 30 minutes)
- 1/2 cup carrot cut into thin slices
- 1/2 cup capsicum cut into thin slices
- 1/2 cup cauliflower florets
- 1/4 cup green peas
- 1/4 cup methi leaves
- 2 medium tomatoes roughly chopped
- 2 green chillies slit
- 1 big onion fine slices
- 1 tbsp ginger garlic paste
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 2 tsp salt
- 2 bay leaves
- 1 black cardamom
- 2 cloves
- 4-5 pepper corns
- 1 tsp cumin seeds
- 1 inch cinnamon stick
- 1/4 cup oil
Cooking Instructions for making Vegetable Pulaw
Chopped all the veggies as your desire shapes and size. Cut the onion into thin slices.
In a pressure cooker add whole spices.saute few seconds add onion slices and cooked till they turn golden.
Add ginger garlic paste, fry one minute add chopped tomatoes and slit green chillies. Cook for 1minute.
Add all the veggies except methi leaves.mix and cook for 2 minutes on high flame. Now Add methi leaves, mix them.
Add turmeric powder, coriander powder, garam masala powder and salt.mix and cook for one minute. Add soaked rice.
Mix gently,add 1.5 cup water and add 1 tsp ghee or butter.cover the lid and pressure cook for 2 whistle. After 2 whistle Switch off the flame and leave it to released the pressure naturally.
Open the cooker, mix gently. Served hot this vegetables pulaw with salad and curd.
