Cooking Instructions for making Vegetarian Wonton Soup🥟🍲
Start by assembling all ingredients.
Heat up a pan over medium heat and add oil. Finely dice the red onions and the jalapeños. Add them to the pan, stirring continuously.
After the red onions have become translucent and the peppers have soften (about 3 -4 minutes), add the ground textured soy and mix. Cook uncovered for 5 minutes, stirring occasionally.
Add the carrots, green onions, salt and pepper; mix and cook for another 2 minutes. Lastly, add the white rice and give it one last mix. Cook covered for 3-4 minutes.
Assemble wonton set up: wonton wrapper on a cutting board or plate, the filling and a cup with a little cold water to seal the wonton.
To make the wonton: Add 1 tsps of filling in the middle of the wonton wrapper. Dip your finger in the cold water cup and trace the border of the wonton wrapper. Start by sealing two corners diagonally forming a triangle and then pinch both bottom corners together. Repeat until filling is done (about 22-25)
To make the soup: Heat up 2 cups of vegetable broth. Add green onions, red pepper flakes, soy sauce, black pepper and oil.
Once simmering, add the wontons and boil for 5 minutes or until desired consistency is met. Do not overcook or they will break open. Remove from heat
Serve warm as a side or appetizer. Yum!
