Ingredients for Veggies egg spicy spaghetti 🍝
- 200 gms boiled spaghetti 🍝
- 9 cups water 💦 for boiling and add salt
- 3 tbsp olive oil or sunflower oil 🌻
- 1 tsp finely chopped garlic 🧄
- 1 finely chopped tomato 🍅
- 2 small finely chopped onions 🧅
- 2 tbsp ready made tomato paste
- 11/2 tbsp green chillies paste
- 11/2 carrot 🥕 diced
- 1/2 cup bell pepper chopped 🫑
- 5-6 green beans chopped
- 3 tbsp finely chopped spring onion
- Salt to taste 🧂
- 1 tsp kashmiri chilli powder 🌶️/ paprika powder
- 1/2 tsp coriander cumin powder
- 2 tbsp soy sauce
- 1 tsp rice vinegar
- 2-3 tbsp hot chilli sauce
- 2 tbsp finely chopped parsley, coriander leaves 🌱 or basil leaves 🌱 if available- for garnish
- For spicy scrambled eggs:
- 3-4 eggs 🥚
- 1 small finely chopped Onion 🧅
- 3 tbsp oil
- 1/2 tsp black pepper powder
- 1 tbsp finely chopped dill 🌱
- Salt to taste 🧂
Cooking Instructions for making Veggies egg spicy spaghetti 🍝
Boiling spaghetti (pasta), in a large pot add water, bring water to boil and add salt, let it boil for 1 min, add spaghetti (pasta) cook for 8-10 mins but it’s best to follow the packet instructions/ directions or cook till it’s firm when beaten, drain the pasta to a colander and keep aside.
Heat oil, add finely chopped garlic, cook till light brown, add finely chopped onions cook till soft and pinkish in colour, add finely chopped tomato cook till soft and oil is separate, add green chillies paste, ready made tomato paste and mix well, add spices, kashmiri chilli powder/ paprika powder, coriander cumin powder and mix well, add vegetables (diced carrot, chopped bell pepper, french beans chopped) and mix well.Cook for 5-6 mins, don’t overcook the vegetables.
Add chopped spring onion, soy sauce, rice vinegar, hot chilli sauce and mix well, add boiled spaghetti and mix gently, check salt if needed add to your taste and add spicy scramble egg and mix well, serve hot.
For spicy scrambled eggs: break eggs, add salt, black pepper powder, finely chopped dill and mix all together, heat oil in a pan and add finely chopped onion, cook till light brown, add egg mixture and mix lightly to scramble them, remove and add them in above recipe. Garnish with finely chopped parsley, coriander leaves or basil leaves.
