Ingredients for 🧅 Caramelised onion, mozzarella and 🥦 broccoli puff pastry tart

1 small head of broccoli, blanched with the stems
Blanched broccoli 🥦 best way to enjoy this lovely green veggie
- 1 big onion, julienne
- Olive oil
- Mozzarella cheese
- Pesto (used wild garlic pesto)
- Optional: drizzle of pomegranate molasses
- Pine nuts
- Spread
- 2 tbps yogurt (plain or greek), sour cream or cream cheese (i had yogurt)
- 1 teaspoon Wholegrain mustard
- Salt and black pepper
Cooking Instructions for making 🧅 Caramelised onion, mozzarella and 🥦 broccoli puff pastry tart
First of all, start with caramelising the onions by adding a drizzle of olive oil in a pan and the onion slices. Cover and cook on low heat by stirring occasionally for almost 30 minutes until nicely brown. I added a drizzle of pomegranate molasses at the end for some extra citrusy sweetness
Preheat the oven at 200C. Unroll the pastry sheet and place on a lined baking sheet. (I kept the dough on its own sheet)
Mix yogurt, mustard and salt together then spread on the dough
Now add the toppings starting with the caramelised onion, then add the broccoli and mozzarella cheese. I also added some pesto, a drizzle of pomegranate molasses and pine nuts
Bake for almost 30-35 minutes. Annnd it’s ready to serve! Enjoy 😊
