Ingredients for Batata Feta and Bacon Biscuits
- 1 large sweet potato = ½ cup mashed sweet potato
- 3 slices streaky bacon
- 3 cups plain flour
- 1 tbps baking powder
- 1 tbsp firmly packed brown sugar
- 1 tsp salt
- 3/4 tsp cream of tartar
- 1 tsp dried onion powder
- 1/3 cup cold butter, cut into pieces
- 1/2 cup feta cheese, crumbled
- 1 cup buttermilk
- Glaze:
- 4 tbsps butter
- 1/4 tsp ground black pepper
Cooking Instructions for making Batata Feta and Bacon Biscuits
Preheat oven to 210 degrees C fan. Line a baking sheet with
parchment paper. Prick the sweet potato and bake for around 45 minutes until soft. Skin and mash with a fork until smooth. Measure out ½ cup. Grill or fry the bacon, put aside until cool, then crumble.
Whisk together the flour, baking powder, sugar, salt, cream of tartar and the dried onion powder. Scatter butter pieces into the flour mixture and using either a pastry blender or knife, cut the butter until the mixture until it looks like coarse crumbs. Stir in the cheese and bacon.
In a separate bowl, whisk the buttermilk with the sweet potato until its smooth. Make a well in centre of flour mixture and pour the milk and sweet potato mixture into the well. Use your hands to bring the mixture together into a dough. Turn the dough out on a floured surface. Pat the dough into a ¾” thick square. Fold the dough in half from left to right then fold again from top to bottom. Pat the dough back into a ¾ inch thick square.
You can use a 2 1/2 “ round cutter but I find it easier to just cut the dough into 8 squares. Place the biscuits onto the baking sheet. Mix the pepper with the melted butter and brush half of it onto the biscuits. Bake until golden, about 12-15 mins. Brush with the remaining butter and pepper. Serve warm.
